KOREAN DUMPLINGS (MANDU)


INGREDIENTS
  • ½ pound ground beef
  • ½ pound ground pork
  • ½ cup chopped onion
  • ½ cup scallions, chopped
  • ½ cup kimchi, roughly chopped, discard excess kimchi liquid
  • 1 tofu cake, place in towel and place under heavy pot for at least 10 minutes to remove excess water from tofu
  • 4 cloves garlic, finely chopped
  • 2 tsp ginger, finely chopped
  • 1 Tbsp sesame oil
  • 2 Tbsp soy sauce
  • 1 tsp salt
  • 1 tsp pepper
  • 1 egg + 1 Tbsp water
  • mandu circular dumpling wrappers
  • For Dipping Sauce: mix together 2 Tbsp soy sauce, 1 Tbsp white vinegar, 1 Tbsp sugar, ½ tsp gochugaru flakes, scallions and sesame seed garnish
INSTRUCTIONS
  1. In large mixing bowl gently combine tofu, beef, pork, onions, scallions, and kimchi
  2. In separate bowl mix together sesame oil, soy sauce, garlic, ginger, salt and pepper
  3. Pour liquid over meat and tofu mixture and gently mix together until well combined
  4. Place tablespoon amount of filling into center of mandu wrapper
  5. Brush egg wash onto top half of outer circular edge mandu wrapper
  6. Fold wrapper, dry edge onto wet edge, pinch and crimp to pleat the wrapper closed
  7. Repeat until no more filling remains
  8. Line mandu on flour rimmed baking sheet so it doesn't stick to it!
  9. Enjoy it pan fried or steamed
